How much are you expected to TIP at service/skill/money/store lots?

There is no set amount. It varies WILDLY. Most people don't tip at all.
The few that do tend to tip large amounts. They rarely tip less than 200, even when they have not stayed long or consumed anything. Those who hang out for a while (I host at skill lots) are generally more like 1000, and some will even fill the thing (5000). There's not more than 4 tippers per day, though. Again most people simply don't give anything. So there isn't any "wrong" tip. (Correction: Trolls wishing to insult people put 1 in. So that gesture is now an insult.)

If you are a very practical person, you'll want to know the cost of hosting. Currently there are no bills and nothing breaks so the cost is all food. People general view the cost as "10 bucks per plate". It is easy, but inaccurate.
Every "HC" platter costs 40 bucks to make (feeds 6 but usually only 1 or 2 people come and get food from it in the 7.5 minutes it takes for that one to spoil.)
Burgers cost 20 bucks to make (6 burgers, but it is not uncommon for a sim to need 2)
The buffet table costs 120 bucks to fill (12 plates; each sim tends to need 2. It usually feeds all 5 sims before it spoils 40 minutes after you've set it.)

If you want to offset the cost of food you can match or double those amounts based on how much you consumed.

It should be remembered, though, that service lots get a much smaller daily visitor bonus than skill lots. People pop in and out without staying for very long and they usually wind up making a fresh platter of HC per person. So I'd definitely not go below 50 bucks on a tip with them and often feel they deserve 200 or higher simply for sticking it out and being open.
